WINE HOUSE NIKOLSBURG MIKULOV

The topic of this diploma thesis was to design a winery house in the open landscape in a traditional wine landscape of Mikulov. The designed building serves as a four stars hotel with apartment rooms, restaurant, wellness, wine shop and a small wine farm with a storage of wine. There are unique views to the Mikulov city, Turold hill and surounding vineyards. The longitudinal axe is oriented on northeast–southwest. Majority of rooms, terraces and both atriums are directed on prospective axes. The object has one basement and three groundfloors. It is (situated) into the sloping terrain and constrasts with the wavy landscape of Mikulov for its racional and linear conception. It is inspired by terracced formations in near suroundings and uses it for its mass as well. It creates a new landscape dominant that remainds the geological formation of limestone situated in the surroundings of the Mikulov city. The regular rhytm of windows on facade refers to the Mikulov´s renaissance. The regular placement of window openings, and their rhythm are inspirated by Mikulov renaissance. Smaller holes, glass surfaces, light color of facade, green roof and shielding elements prevent from overheating the object during the summer. The water element in the courtyard offers pleasant refreshment for the visitors.

What’s a building in the landscape like? It’s not indifferent. It uses but doesn’t abuse. It doesn’t compete. It is not indifferent The theme of the project is the road – as progress, as an element of composition. It starts among the vineyards and ends with a view of the hills of Pálava, the dominant feature of the landscape. In the middle, the road is enclosed by houses and passes through a large frame which creates a picture of the landscape that changes with time. Henceforth, the building is not just a building; it is also a frame through which we see an endless number of pictures. It uses but doesn’t abuse The buildings of the winery and of the wine research institute are designed according to the principles of sustainability and are as environmentally friendly as possible. Built with wooden panels on a barren plot of land, they make use of waste water. Does not compete The buildings are located amid the vineyards with a view of the Pálava hills. From the distance, they appear to blend with the landscape thanks to the climbing vines on the outside walls.

Urbanist concept in the cadastral area of Strachotín village is based on spiral inspirations. The village is located on the banks of Novomlýnské nádrže and offers a wonderful view of Pálava. Therefore, for me, the most powerful motif has become the nature, which is cyclical, but does not repulse. The spiral has been applied to the driveway to a selected location offering the best view and communicating with the village. The function of the winery was supplemented by a small recreational riding complex. The functional solution offers the possibility of visiting, family recreation or organizing corporate events and presentations. When embedding functions, it was considered the most convenient mode of transport that would capture that function. This was further refined by the creation of public spaces that link to the various sites and the whole area. The actual mass solution of objects is inspired by Pálava itself, which is hard but delicate. For my most important objects, it "crystallized" and encouraged them to cover the greenery with the least important visitor.
Yeasts and wine

This thesis deals with isolation and identification wine yeasts from grapes and must. For analysis was used white wine Sauvignon that was grown and producing after needs ecological agriculture. Remove samples were processed in laboratory and by the help of dilution method were obtained pure culture isolated yeasts. In the following step, by the application of commercial kit UltraCleanTM Microbial DNA Isolation Kit we were able to isolated individual DNA that it was used to the next analysis. Isolated DNA was amplification by PCR method with ITS1 and ITS4 primers. PCR products were detected on agarose gel. Amplification samples were chopped five restriction endonucleases: HaeIII, HinfI, TaqaI, AluI and MseI. Chopped DNA was detected by the same way as PCR products and it was compared with restriction patterns of collection yeasts. In the next step it was compared genetic similarity of isolated yeasts by using BioNumerics software. As a criterion it was used Pearson coefficients and UPGMA clastering analysis. The result is dedrogram of genetics similarity isolated yeasts.
Development of a Small Family Business

This bachelor thesis focuses on the development of a small family winery in Strachotín under the Pálava Protected Landscape Area. The intention of this work is to analyze the current state of the company and its surroundings, and on this basis to propose specific forms of development, especially concerning marketing activities and expansion of services.
Wine Farmstead in Jaroslavice

Key strategy of the project works with hidden potential of the former loess quarry and its terrain modification. Finding the closure between the winery and the landscape. To merge, to reach the symbiosis. They winemaking area is situated in the heart of the slope, to keep the wine in stable environment and creating the retaining wall at the same time. Concept is build on a traditional principles of agricultural yard and connection of partial functions through it.

Moravian Wine Center

The subject of the diploma thesis is a proposal of a winery with a wine shop, wine salon and tasting rooms. Furthermore, a four-star hotel for sixty persons with a restaurant, a small wellness center, and all of course with sufficient technical background. This newly designed building is located in the undeveloped part of the town of Mikulov between the Turold and Růžový vrch nature parks. Růžový vrch has become an inspiration for this design. I design here terraces as an analogy to the cultivation of vines on the terraces, where the investor is also the owner of the vineyards grown here. The concept was based on the slope of the terrain and the orientation to the cardinal points. I also tried to make the most valuable views and suppress the view of the technical zone southwest of the parcel. An important element of expression of my proposal is front facade system made of ceramic „squaretubes“, which primarily serve as a sunbreaker.

The topic of the diploma thesis is a multifunctional building of a hotel, in an undeveloped area of picturesque vineyards. The expanding Nikolsburg winery plans to build a hotel with a beautiful view of the historic town Mikulov and the Pálavské vrchy. Hotel should include accommodation for at least 30 guests in **** rooms, a restaurant, a wellness area and, above all, wine storage areas. The wine will be matured in the building and further distributed. Visitors can degustate and buy the wine here. The architectural concept further expands the multifunctionality of the assignment. Common areas should be adapted to the situations and the problem of one-time occupancy of the building, especially in the season and on weekends.
Winery

The diploma thesis deals with project of a new building of winery production. Winery has one floor and a basement. We can split the winery into three parts. First part – production. This whole part is dedicaded to the production of wine. It consists of spaces where grapes are degraded, fermented, pressed, stored, bottled, labeled and subsequently exported. Production has a volume of 300 000 l of wine. Second part is for administration. There are two offices and a confrence room. Third part is for public using and it is composed of the tasting room with view at the wineyard and of the retail hall. The structural system is prefabricated skeleton of reinforced concrete. The roof is constructed as a flat green roof.
